“It’s all about ladies celebrating ladies.”

If loving your friends was a competition, Galentine’s Day, February 13, is Leslie Knope’s Super Bowl. The iconic lead character of Parks and Recreation loves celebrating her friends with waffles, presents, and a boundless enthusiasm that extends beyond a single day.

In fact, Leslie prides herself for championing all the women in her life. When April considered leaving the Parks Department to chase a new career, Leslie created a detailed binder to guide her through that journey. After Ann became pregnant, Leslie showed up at doctor’s appointment to support her friend. And when a little girl was excluded from the all-boys Pawnee Rangers, Leslie didn’t just protest – she founded the Pawnee Goddesses.

She did this while showering everyone with positive, hilarious, and creative compliments. One of her most memorable lines? “Oh, Ann, you poetic and noble, land mermaid.”

In her spirit, we’re dedicating this edition to all things Galentine’s Day – from heartfelt cards to skincare sets. Find all this and more in the February KNOW Newsletter.

Beet Lover Hot Pink Steak Salad

SALAD INGREDIENTS

Romaine, chopped

Shaved purple carrots

Chioggia beets, peeled and thinly sliced Pickled red onion

Persian cucumber, sliced into rounds

Pomegranate seeds

Mint

Pistachios

Crumbled goat cheese

SPICY ROASTED BEET DRESSING INGREDIENTS

½ cup Greek yogurt

⅛ cup mayo

¼ roasted beet

6 cloves roasted garlic

Handful of chives

Handful of mint

Handful of basil

Juice of ½ lemon

2 tbsp hot honey

Salt and pepper, to taste

½-1 jalapeño, depending on spice of jalapeño and individual preference

BEETS AND ROASTED GARLIC PREPARATION

Preheat the oven to 400 degrees. Wash the beet well and trim the stem. Coat it with a little olive oil and sprinkle it with kosher salt. Wrap in foil and roast at 400 degrees for about 45 minutes.

Trim head of garlic to expose bulbs. Drizzle some olive oil and salt on top. Wrap in foil and roast along with the beets. Once garlic has cooked and is cooled, squeeze cloves out of the skin and discard the skin.

STEAK PREPARATION

We used rib eye. Coated in a little avocado oil, salt, and pepper, and then grilled on med/high heat about 4 minutes a side. Took off around 125 internal temp.
